Atavus is a wine that takes its name from the winery; it is a faithful representative of the potential of this region, with mineral and deep soils that give the wine austerity, complexity, and structure.

Origin

Atavus is a wine made from plants that grow among slopes and terraces on the banks of the Siurana River. The vines that produce this wine have an average age of over 25 years. The soil is composed of "Licorella," a slate with little organic matter and low water retention. Therefore, the vines have a low yield, about 300 to 500 grams per plant.

Tasting note

Ruby color of medium body with tile-colored edges. Clean and bright. High aromatic intensity on the nose. Great aromatic complexity. Aromas of ripe black fruit, balsamic notes, tobacco, smoke, bay leaf, Provençal herbs, and chocolate. Very intense flavor on the palate. Good balance between acidity and flavor intensity. Well-integrated alcohol content. Favorable evolution in the bottle. Great volume and body. Long and pleasant finish.

Vinification

Spontaneous fermentation with indigenous yeasts in stainless steel tanks at controlled temperature. Aged for 8 months in 225-liter medium-toast French oak barrels. Wine unfiltered and unclarified. Very limited production.
